Fizzy Firework Cupcakes!


Colourful confetti cakes but with an exciting twist! These fizzy firework cupcakes really go out with a bang, so they where perfect for bonfire night. They also pop and snap when you eat them which is lots and lots of fun! The only thing that could make watching fireworks any more fun is to accompany the festivity with cake. Mind you, that is my view on most things...

I personally had a wonderful bonfire night and it too wasn't cold! I was all prepared for a joyous yet freezing night, but when I arrived there was a huge bonfire so I was kept toasty warm. My face might have actually reached melting point had I stood any closer. However these cupcakes, you will be glad to hear, are at a safe temperature.





Firework Cupcakes.
Makes 12 colourful cupcakes... 

For the cakes
100g Butter (room temp.)
100g Caster sugar
100g Self raising flour
4tbsp Coloured sprinkles
2 Eggs

Preheat the oven to 190C (Fan).
In a mixing bowl combine the butter, sugar, flour and eggs to form a smooth batter. Carefully fold in the sprinkles. Do this slowly and avoid mixing too much otherwise they will loose their colour before they even get into the oven. 
Divide this mixture equally between 12 cupcake cases and bake for 20mins. 



For the decoration
100g Butter (room temp.)
250g Icing sugar
1tsp Vanilla essence
Popping candy
Sherbet
Coloured sprinkles

Ok here comes the fun bit! Once you have allowed your cupcakes to cool you can get started on making them fizz like fireworks. In a large bowl gently mix the butter, icing sugar and vanilla essence to create a firm yet pipe-able icing. Now load it all into a piping bag and create upward spirals on each of your cupcakes. This gives your cupcakes a bit more hight which is good for our theme. 
Now you can sprinkle them with popping candy, sherbet and more sprinkles.
